Well I decided to try something new this thanksgiving and instead of making creamy corn… I made creamy cauliflower. My family was made aware in advance that there were being used as taste testers, and though some didn’t care for the new option several said they would eat it again.
My wonderful Husband who supports me in everything but also won’t lie to me actually said he thought it would have been better if the cauliflower pieces were a little bigger. I can’t disagree, and I think next time I make this I’ll add some sweet red peppers or combine sweet corn and cauliflower. Here what I did.
2 bags of frozen riced cauliflower
2 pkg Philadelphia cream cheese
1 stick real butter
1 small can diced green chilies
Place all items in a crock pot on high till it starts to melt. Then reduce to low heat and stir occasionally until well melted and very creamy.
I have not calculated the calories yet, but it was a decent lower carb option for the day!
