These awesome and light biscuits will make your day!

Ingredients (makes about 4)

1 cup PLUS 2 tablespoons almond flour
1 teaspoon baking powder
½ teaspoon sea salt
2 tablespoons cold salted butter
3 Egg whites large


Make sure the butter is cold.

Mix the dry ingredients together, then in a food processor add butter in small pieces. Pulse until mixed and small balls are present. OR You can use a pastry cutter to mix the butter in. Whip the eggs till really frothy with a wisk. Making them more fluffy will increase the light texture in the biscuits. Fold the eggs into the dry ingredients.

Place on parchment paper and bake at 400 for about 10-15 minutes. I used a muffin tin, and it worked great.
