If you’ve heard the story from Ancel Keys flawed study way back in 1958 you would understand he determined that cholesterol was the cause of heart disease, but saying that cholesterol is the actual cause of heart disease is like blaming the police for a crime. It’s like blaming the clean up crew for making the mess. Cholesterol is made by almost every cell in the body. Actually it makes about as much as 300 strips of bacon or a pound of butter. When you eat more fats, your body actually makes less cholesterol. Insulin is the real criminal. Our bodies were never designed to utilize the amount of insulin that we are exposed to in this day and age. Insulin has two main jobs… One is to get sugar (glucose) into the cell and the other is to store any excess sugar as fat. Insulin is an inflammatory hormone that can cause inflammation if you have more than you need floating around in your blood. The real culprit in cardiovascular disease is insulin and the standard American diet which is high in carbohydrates like breads, pastas, grains, crackers, sugar etc. Reducing these carbohydrates and eating more natural carbohydrates like broccoli, spinach, kale, etc. will reduce insulin and cholesterol in your blood, starting with those troublesome triglycerides.
