Keto No bake cookies – Chocolate/Peanut Butter/Coconut Flakes
4 tbs real butter melted
3/4 cup peanut butter low carb
1 1/2 -2 cups unsweetened coconut flakes
2 tsp Truvia or Swerve granulated
2 tbs chocolate PB2
1/4 cup dark chocolate chips melted
In a small double boiler melt butter and add sweetener, and dark chocolate. When melted Stir in peanut butter and PB2.
Add unsweetened coconut flakes and stir well.
Spoon onto parchment paper in small haystacks and freeze for 20 mins or until solid. Store in the refrigerator.
This is not as low carb as I would like a recipe to be, but… its way better than the original recipe in regards to sugar content and since I am allergic to oats… I can still have one of my favorite childhood snacks.
